There are so many good things I can say about this easy recipe – sweet, sticky, moreish, it’s hard to believe that you only need 3 ingredients to make it. Plus, thanks to one flavour-bomb ingredient, you can deliver all the fruity, spiced flavours of apple, date, sultana, mustard, cinnamon, ginger, and nutmeg… in one. The secret ingredient? Fruit chutney. Yes, chutney is the superstar of this tasty slow-cooked lamb recipe. I use a couple of jars as a cheeky way to add a rich depth of flavour to this recipe (with very little effort!).
How to make slow-cooker lamb: key tips
With just one appliance and 3 ingredients, you can really impress your friends and family with this incredibly tasty dish. Make sure the lamb you select will fit into your slow cooker, and remember, if your lamb leg is larger than the one in the recipe (I used a 2.2kg) it might take a little longer to cook. This recipe makes enough for 8, but you can use a half leg of lamb or lamb shanks if you’re feeding a smaller group of people. For fewer people, I also suggest using only 1 jar of fruit chutney and a couple of onions. The lamb also freezes wonderfully well, so you can make a batch, cool it then store it in an airtight container in the fridge for up to 3 months, making it a great prep-ahead recipe.
What goes into this 3-ingredient slow cooker lamb
Woolworths Fruit Chutney is the real star here as it contains an abundance of warming spices, chunky pieces of fruit, and sweet orange juice, all of which complement the lamb so well. The chutney packs a flavour punch and is budget-friendly, making this easy lamb dish a real winner.
Ingredients
- 2.2kg Woolworths Lamb Leg Roast
- 1 tbsp olive oil
- 3 large brown onions, cut into thick wedges
- 2 x 260g jars Woolworths Fruit Chutney

Step 1Using a small sharp knife, pierce lamb all over. Season well with salt and pepper.

Step 2Heat oil in a large frying pan over high heat. Cook lamb for 10-12 minutes or until browned all over. Transfer to a slow cooker.

Step 3Add onion to same pan and cook, stirring occasionally, for 2 minutes or until starting to brown. Add chutney and stir until heated through.

Step 4Pour onion mixture over lamb. Cover and cook for 5 hours on high (or 8 hours on low) or until the lamb is tender.

Step 5Using tongs, carefully remove and discard skin and bones from lamb. Using 2 forks, coarsely shred lamb and stir to combine with the onion mixture. Serve.

How can I thicken the sauce in this recipe?
If you would like your sauce a little thicker, once you’ve shredded the lamb, whisk 1 1/2 tbsp cornflour and 1 tbsp cold water in a small bowl. Add to the lamb mixture and stir to combine. Cover the slow cooker and cook on HIGH for 15-20 minutes or until mixture starts to bubble and thicken.
What can I serve with this slow cooker lamb?
Serve the lamb alongside creamy mashed potato and steamed greens. For a lighter option, serve with a brown rice and roast vegetable salad.
