Fresh, crisp and it will become a barbeque regular!
Ingredients
- 2 tsp tamarind puree
- 1 tbs brown sugar
- 1 tbs hot water
- 250 g cherry tomato quartered
- 1/2 red onion finely chopped
- 1/2 fresh long green chilli deseeded thinly sliced
- 1/2 fresh coriander coarsely chopped
Method

Step 1Combine the tamarind puree, sugar and water in a small bowl. Taste and season with salt.

Step 2Combine the tomato, cucumber, onion and chilli in a medium bowl. Add the tamarind mixture and toss to combine.

Step 3Add the coriander and stir until just combined. Serve.

Recipe Notes
I leave out the chilli as the kids don't like it. Chop everything up the day before so its all ready and dress it just before serving.
