Ingredients

  • 1 cup self-raising flour
  • 1 cup soft brown sugar
  • 1 tsp ground cinnamon
  • 1 cup coconut
  • 1 cup rolled oats
  • 1 egg
  • 1 cup milk
  • 1 cup apple grated

Method

  • Step 1
    Sift together flour, sugar and cinnamon. Stir in oats and coconut.

  • Step 2
    Make a well in the centre and pour in apple and milk mixed together. Mix until combined.
  • Step 3
    Spoon into sprayed non-stick muffin tins, filling until nearly full.
  • Step 4
    Bake at 200C for 20 minutes.
Recipe Notes

I use 2-3 Granny Smith apples. You could substitute 1 cup of any fruit. If doing this, you may need to omit cinnamon. I usually double the recipe because they disappear very quickly. I have made them in mini muffin tins too.
