An easy to make muffin, named because the flavour reminds us of Anzac biscuits. A tick in every box, easy, tasty and healthy.
Ingredients
- 1 cup self-raising flour
- 1 cup soft brown sugar
- 1 tsp ground cinnamon
- 1 cup coconut
- 1 cup rolled oats
- 1 egg
- 1 cup milk
- 1 cup apple grated
Method

Step 1Sift together flour, sugar and cinnamon. Stir in oats and coconut.

Step 2Make a well in the centre and pour in apple and milk mixed together. Mix until combined.

Step 3Spoon into sprayed non-stick muffin tins, filling until nearly full.

Step 4Bake at 200C for 20 minutes.
Recipe Notes
I use 2-3 Granny Smith apples. You could substitute 1 cup of any fruit. If doing this, you may need to omit cinnamon. I usually double the recipe because they disappear very quickly. I have made them in mini muffin tins too.
