Very easy to prepare, and tastes best when prepared the night before. Great to take along to a family BBQ, looks very colourful and tasty!
Ingredients
- 1 red capsicum diced
- 1 green capsicum diced
- 1 red onion diced
- 5 spring onion thinly sliced
- 2 carrot grated
- 420 g canned corn drained
- 330 ml thousand island salad dressing
- 500 g shells pasta shapes
- 1/2 tsp salt and pepper *to taste
Method

Step 1Cook pasta according to package instructions. Rinse through with cold water when draining to stop cooking process.

Step 2Add pasta to a large bowl along with prepared vegetables, stir through the dressing.

Step 3Mix together gently until well combined, and add salt and pepper to taste if desired.

Step 4Cover and refrigerate until needed. Can be served cold or at room temperature.

Recipe Notes
Dressing can be substituted with 'lite' dressing for a healthier alternative. Can add seafood highlighter and cocktail prawns for something different. Use white part only for spring onions. You can use canned corn or sweetcorn.
