Ingredients

  • 1 red capsicum diced
  • 1 green capsicum diced
  • 1 red onion diced
  • 5 spring onion thinly sliced
  • 2 carrot grated
  • 420 g canned corn drained
  • 330 ml thousand island salad dressing
  • 500 g shells pasta shapes
  • 1/2 tsp salt and pepper *to taste

Method

  • Step 1
    Cook pasta according to package instructions. Rinse through with cold water when draining to stop cooking process.
  • Step 2
    Add pasta to a large bowl along with prepared vegetables, stir through the dressing.
  • Step 3
    Mix together gently until well combined, and add salt and pepper to taste if desired.
  • Step 4
    Cover and refrigerate until needed. Can be served cold or at room temperature.

  • 1 bowl
Recipe Notes

Dressing can be substituted with 'lite' dressing for a healthier alternative. Can add seafood highlighter and cocktail prawns for something different. Use white part only for spring onions. You can use canned corn or sweetcorn.
