My son's nanny introduced me to these lovely biscuits. I always make them at Christmas time and put them on a pretty plate with cellophane and ties to give away to friends and family.
Ingredients
- 1/2 cup butter
- 1/2 cup caster sugar
- 1 egg
- 1 1/4 cups self-raising flour
- 2 tsp ground cinnamon
Method

Step 1Cream butter and sugar with mixer.

Step 2Add egg and beat.

Step 3Fold in sifted flour and cinnamon until mixture is well combined and smooth.

Step 4Roll into small balls and place on baking paper lined biscuit slides. Press gently with fork.

Step 5Bake at 180C until biscuits are just lightly browned, approximately 13-15 minutes.
Recipe Notes
If mixture is too soft, add a small amount of extra flour and mix through.
Dip fork in flour before pressing down on mixture to stop it from sticking to biscuits.
Keep balls uniform size, so that sizes match when sandwiching together.
Sandwich biscuits together (flat sides inwards) with a thin layer of raspberry jam and ice one side with pink-coloured vanilla icing.
Sprinkle with 100s and 1000s.
