A great winter soup for the whole family.
Ingredients
- 1 onion
- 4 bacon rashers rindless roughly chopped
- 3 potato cubed peeled
- 2 cup vegetable stock, hot
- 3 celery stick sliced
- 2 tbs plain flour
- 2 cup milk
- 1/2 cup tasty cheese grated
- 1/4 cup fresh chives chopped
Method

Step 1Spray a large pan with oil and allow to heat.

Step 2Add onion and bacon and cook for 1 minute.

Step 3Add potatoes and cook for a further 3 minutes over a low heat.

Step 4Add stock and celery to the potato mixture.

Step 5Bring to the boil, reduce heat and simmer covered for 10-15 minutes or until potatoes are tender.

Step 6Blend flour in half a cup of milk, then once blended add remaining milk and mix. Slowly pour mixture into the soup. Increase heat and stir constantly until soup boils and thickens.

Step 7Remove from heat and stir in cheese and half the chives.

Step 8Season to taste with cracked black pepper.

Step 9Serve topped with remaining chives.
Recipe Notes
If you don't want to use bacon you can use leftover chicken or ham. I add more bacon and a little more cheese, and always eat with really crusty bread. This is a great recipe for freezing, for lunches during the week or for a quick tea.
