This hearty curry casserole is full of flavour (but not too much spice)! It is mild enough for the whole family to enjoy. - dennii

Ingredients

  • 1kg beef blade steak cubed
  • 2 tbs plain flour
  • 1 tsp salt
  • 2 tbs oil
  • 2 carrot large sliced
  • 4 celery ribs sliced
  • 1 onion large chopped
  • 2 apples sliced
  • 2 tsp curry powder
  • 1 tbs lemon juice
  • 440g tomato soup
  • 1 1/2 cups water
  • 2 tbs golden syrup

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Combine salt and flour in a bowl.
  • Step 3
    Toss meat in combined flour and salt.
  • Step 4
    Heat the oil in frying pan over high heat. Brown the meat in several batches.
  • Step 5
    Place the browned meat into a greased casserole dish. Use a casserole dish with a lid.
  • Step 6
    Brown the carrots, celery, onion and apples in the pan, then transfer to the casserole dish with the meat.
  • Step 7
    Combine the remaining ingredients in a jug. Pour over meat and vegetables.
  • Step 8
    Cover and place in the oven. Cook for 2 hours or until the meat is tender.

Recipe Notes

Serve with rice for a very filling meal, they'll be back for more –if they can fit it in!
