This sweet summery coconut and pineapple dessert tastes like a tropical holiday. I love enjoying this sweetened condensed coconut milk and pineapple flummery on a hot summer’s day. If you’re wanting to know what ‘flummery’ is before you try it, it’s essentially a soft, sweet desert. By refrigerating the dessert, the gelatine powder will create an almost jelly-like consistency. Ingredients

  • 3 tsp gelatine powder
  • 320g can sweetened condensed coconut milk
  • 270ml can coconut milk
  • 450g can crushed pineapple in syrup

Method

  • Step 1
    Place 1/4 cup water in a small bowl. Sprinkle over gelatine. Set aside for 5-10 minutes to bloom, then microwave in 10 second bursts, stirring each time, until gelatine has dissolved completely.
  • Step 2
    Place condensed coconut milk and coconut milk in the bowl of a stand mixer with the whisk attachment. Whisk for 2-3 minutes until thick. Add gelatine mixture and crushed pineapple, including any liquid. Whisk again until completely combined. Pour into serving glasses and refrigerate for 1-2 hours until set. Serve.

  • You could serve this in a large serving bowl rather than individual glasses/dishes.
