Weet-bix slices are always popular, and they’re a great excuse to use those broken bits and crumbs left in the bottom of a packet. This delicious example is infused with chocolate and coconut and covered in a silky chocolate icing. Who knew breakfast cereal could taste this good?!
How to make Weet-Bix slice: key tips
When crushing the Weet-Bix, I try not to make the pieces too small, or the slice ends up very dense. Also, when combining the wet and dry ingredients, stir gently until just combined so the Weet-bix doesn’t break up and turn to mush. Do press it well into the pan, though, so it doesn’t end up crumbly.
Quite a thin icing is made for this slice. Make sure your slice is completely cooled before adding the icing or it will just run off, and let the icing set before you cut the slice into squares. If you like, sprinkle over some coconut to decorate before the icing is set.
Key ingredients in this Weet-Bix slice recipe
You’ll need five crushed Weet-Bix for this recipe. You can use the crushed crumbs and broken bits, along with any crushed whole biscuits to make up the amount. As a heads up, 5 Weet-Bix = 78g.
Use a good-quality cocoa for this slice so that it has a lovely chocolatey taste. The golden syrup, while sweeter than sugar, will add a gorgeous caramelised and buttery flavour to your Weet-Bix slice.

Ingredients
- 5 Weet-Bix™ crushed
- 11/2 cups plain flour
- 2 tsp baking powder
- 2 tbsp cocoa
- 3/4 cup Woolworths Desiccated Coconut
- 1 cup sugar
- 1 tbsp golden syrup
- 200g margarine
- 1 tsp vanilla essence
Icing
- 2 cups icing sugar, sifted
- 2 tbsp cocoa
- 1 tbsp margarine
- boiling water
Method

Step 1Combine Weet-Bix, flour, baking powder, cocoa and coconut in a mixing bowl.

Step 2Place sugar, golden syrup and margarine into a saucepan and simmer until sugar is dissolved.

Step 3Add vanilla essence and blend together.

Step 4Pour the liquid blend over dry ingredients and mix together.

Step 5Press into a 20cm x 30cm lined baking dish.

Step 6Bake in a moderate oven, 180°C, for 15 minutes or until firm. Remove from oven and cool.

Step 7To make icing combine icing sugar, cocoa and margarine in a bowl. Gradually add boiling water mixing until desired thickness is reached.

Step 8Spread icing over slice.

I’ve heard you can freeze Weet-Bix slice
It’s true, this slice freezes well. Let the icing set and then cut the slice into squares. Transfer the pieces to a tray and place in the freezer until firm. Next, transfer the pieces to a sealable bag and return to the freezer. As the pieces have been frozen individually first, they won’t stick together in the bag.

Aside from sprinkling with coconut, you could try any coloured sprinkles, hundreds and thousands, or finely chopped peanuts or hazelnuts. Just be sure to sprinkle anything on the slice before the icing sets so that it will stick.

To store, arrange the squares of slice between layers of baking paper in an airtight container. Keep in the fridge for up to 5 days.
