Ingredients
- 2 tbs vegetable oil for frying
- 2 sweet potatoes medium peeled
Method

Step 1Heat oil in a large saucepan.

Step 2Peel sweet potatoes to remove skin. Using a vegetable peeler, continue to peel the sweet potato lengthways to create the 'chips', working quickly to minimise discolouration.

Step 3Pat dry with clean tea towel or paper towel and carefully drop large handful amounts into hot oil and fry until golden and crispy.

Step 4Drain well and serve as part of a meal or as a snack.
