Ingredients

  • 2 tbs vegetable oil for frying
  • 2 sweet potatoes medium peeled

Method

  • Step 1
    Heat oil in a large saucepan.
  • Step 2
    Peel sweet potatoes to remove skin. Using a vegetable peeler, continue to peel the sweet potato lengthways to create the 'chips', working quickly to minimise discolouration.
  • Step 3
    Pat dry with clean tea towel or paper towel and carefully drop large handful amounts into hot oil and fry until golden and crispy.
  • Step 4
    Drain well and serve as part of a meal or as a snack.
