These will go well in the school lunch box.
Ingredients
- 1 3/4 cup plain flour sifted
- 1/2 cup sugar sifted
- 1 tsp baking powder sifted
- 1/2 tsp salt sifted
- 1 tsp lemon grated peeled
- 2 egg
- 2/3 cup milk
- 1/3 cup butter melted
- 2/3 cup strawberry jam
Method

Step 1Preheat oven to 205C. Grease muffin pan.

Step 2Sift flour, sugar, baking powder and salt into a bowl.

Step 3Add lemon peel, eggs, milk and butter and stir until combined.

Step 4Spoon 1 tablespoon of mixture into each muffin hole. Top with 1 teaspoon of jam. Cover with another tablespoon of mixture.

Step 5Bake for 12-15 minutes.

- 1 12-hole muffin pan
- 1 grater
Recipe Notes
Jam flavour is of your choice. Instead of jam you can use grated coconut, chopped nuts or raisins.
