Ingredients

  • 1 3/4 cup plain flour sifted
  • 1/2 cup sugar sifted
  • 1 tsp baking powder sifted
  • 1/2 tsp salt sifted
  • 1 tsp lemon grated peeled
  • 2 egg
  • 2/3 cup milk
  • 1/3 cup butter melted
  • 2/3 cup strawberry jam

Method

  • Step 1
    Preheat oven to 205C. Grease muffin pan.
  • Step 2
    Sift flour, sugar, baking powder and salt into a bowl.
  • Step 3
    Add lemon peel, eggs, milk and butter and stir until combined.
  • Step 4
    Spoon 1 tablespoon of mixture into each muffin hole. Top with 1 teaspoon of jam. Cover with another tablespoon of mixture.
  • Step 5
    Bake for 12-15 minutes.

Equipment

  • 1 12-hole muffin pan
  • 1 grater
Recipe Notes
Jam flavour is of your choice. Instead of jam you can use grated coconut, chopped nuts or raisins.
