Surf and turf or reef and beef. It is as good as you get at the local pub.
Ingredients
- 2 tbs butter
- 2 garlic cloves crushed
- 2 tbs plain flour
- 1 pinch paprika
- 1 pinch salt
- 1 pinch pepper
- 600 ml thickened cream warmed
- 500 g Woolworths Green Banana Prawns Large Thawed, patted dry with paper towel peeled
- 1/4 cup fresh curly parsley chopped *to taste
- 4 rump beef steak
Method

Step 1Melt butter on low heat in a medium sized saucepan.

Step 2Add garlic and cook for 1 minute, stirring.

Step 3Add flour, paprika, salt and pepper and stir to combine.

Step 4Increase heat to medium high.

Step 5Gradually add 500 mL of the warm cream in batches, briskly stir to combine before adding more cream.

Step 6Add prawns and parsley, and simmer until prawns are just cooked through.

Step 7Add up to 100 mL of the reserved cream if too thick.

Step 8Serve over cooked steak with potatoes and salad.

Recipe Notes
This method is the same as a basic roux, adding garlic and prawns. The cream is better warmed before adding to the butter and flour mixture as it blends better when stirred. The thickness of the sauce depends on the amount of moisture in the prawns, just adjust the reserved cream accordingly.
Use rump steaks or cut of choice.
