Ingredients

  • 1 1/4 cups almond meal
  • 70g butter
  • 1/2 cup liquid sweetener sugar substitute
  • 2 eggs
  • 1/2 cup plain flour
  • 1 tsp baking powder
  • 2 cups frozen raspberries
  • 1 tsp vanilla essence

Method

  • Step 1
    Preheat oven to 160C fan forced and line a 20cm x 30cm tin with baking paper.
  • Step 2
    Beat together butter and Natvia with an electric mixer until light and fluffy. Continue beating and add eggs one at a time.
  • Step 3
    Add vanilla essence and almond meal and mix well. Sift flour and baking powder into the mixture and stir until smooth.

  • Step 4
    Pour the mixture into the tin and smooth out. Arrange raspberries gently over the top of the mixture.
  • Step 5
    Bake for 30-35 minutes until golden. Cool in tin before removing from tin and slicing.
Recipe Notes

Use Natvia sweetener or liquid sweetener sugar substitute.
