Ingredients

  • 3 ripe bananas, mashed
  • 2 eggs
  • 125ml rice bran oil
  • 125ml buttermilk
  • 1 tsp vanilla extract
  • 300g plain flour
  • 2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 300g firmly packed brown sugar
  • Butter, softened, to serve

Method

  • Step 1
    Preheat oven to 180C/160C fan forced. Grease a 7cm-deep, 13cm x 23cm (top) loaf pan and line with baking paper, extending paper over long sides.
  • Step 2
    Whisk banana, eggs, oil, buttermilk and vanilla in a large bowl. Sift flour, baking powder bicarbonate of soda and cinnamon over banana mixture. Add sugar and stir until just combined.
  • Step 3
    Pour into prepared pan and bake for 1 hour 10 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 10 minutes, then transfer to wire rack to cool slightly.
  • Step 4
    Serve warm or at room temperature with butter.
