With a divine crisp crust and a moist and fluffy interior, this is the banana bread that will beat all other banana breads. Plus, you only need one bowl to make it!
Ingredients
- 3 ripe bananas, mashed
- 2 eggs
- 125ml rice bran oil
- 125ml buttermilk
- 1 tsp vanilla extract
- 300g plain flour
- 2 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 300g firmly packed brown sugar
- Butter, softened, to serve

Step 1Preheat oven to 180C/160C fan forced. Grease a 7cm-deep, 13cm x 23cm (top) loaf pan and line with baking paper, extending paper over long sides.

Step 2Whisk banana, eggs, oil, buttermilk and vanilla in a large bowl. Sift flour, baking powder bicarbonate of soda and cinnamon over banana mixture. Add sugar and stir until just combined.

Step 3Pour into prepared pan and bake for 1 hour 10 minutes or until a skewer inserted into the centre comes out clean. Stand in pan for 10 minutes, then transfer to wire rack to cool slightly.

Step 4Serve warm or at room temperature with butter.
