Ingredients

  • 2 cups self-raising flour
  • 3 eggs
  • 1 cup caster sugar
  • 600 ml thickened cream
  • 1 can mixed fruit
  • 1 cup dried breadcrumbs
  • 1 tsp icing sugar
  • 2 tsp vanilla sugar
  • 50 g unsalted butter

Method

  • Step 1
    Preheat oven to 180C (fan - forced 160C). Grease a baking pan with butter and dust with breadcrumbs to line sides and bottom completely.
  • Step 2
    In a mixing bowl, sift flour. Add sugar eggs and thickened cream. Mix well until well combined.
  • Step 3
    Pour batter into baking pan and top with strained fruit. Place in preheated oven and bake for 1 hour or until a skewer comes out clean when inserted into middle.
  • Step 4
    Turn cake onto a plate and cover with a wet tea towel. Allow to stand this way for 2 minutes before uncovering. Allow to cool.
  • Step 5
    Mix icing sugar and vanilla sugar together and dust over cake to serve. Serve with coffee or tea.
