Cheap, easy, quick and yummy.
Ingredients
- 2 cups self-raising flour
- 3 eggs
- 1 cup caster sugar
- 600 ml thickened cream
- 1 can mixed fruit
- 1 cup dried breadcrumbs
- 1 tsp icing sugar
- 2 tsp vanilla sugar
- 50 g unsalted butter
Method

Step 1Preheat oven to 180C (fan - forced 160C). Grease a baking pan with butter and dust with breadcrumbs to line sides and bottom completely.

Step 2In a mixing bowl, sift flour. Add sugar eggs and thickened cream. Mix well until well combined.

Step 3Pour batter into baking pan and top with strained fruit. Place in preheated oven and bake for 1 hour or until a skewer comes out clean when inserted into middle.

Step 4Turn cake onto a plate and cover with a wet tea towel. Allow to stand this way for 2 minutes before uncovering. Allow to cool.

Step 5Mix icing sugar and vanilla sugar together and dust over cake to serve. Serve with coffee or tea.
