Ingredients

  • 50g (1/3 cup) custard powder
  • 500ml (2 cups) milk
  • 395g can sweetened condensed milk
  • 200g pkt lattice biscuits
  • Caramel topping, to serve

Method

  • Step 1
    Grease a 20cm square cake tin and line with baking paper.
  • Step 2
    Combine custard powder and ½ cup milk in a medium saucepan until a smooth paste forms. Add the remaining milk and condensed milk and mix until combined. Place over a medium heat to bring to the boil, stirring continuously.
  • Step 3
    Arrange lattice biscuits over the base of the prepared tin. Pour over custard and arrange a layer of lattice biscuits, shiny side up, on top. Cover and refrigerate for 3-4 hours or until custard is set.
  • Step 4
    To serve, cut into pieces and drizzle with caramel topping.
Recipe Notes

Arnott’s has now discontinued Lattice biscuits, but this recipe for homemade Lattice biscuits shows you how to turn their SAO crackers into them, just by glazing with a simple sugar syrup. If you prefer the thinner Salada biscuits, you can easily substitute SAOs for Saladas.
