Light and fresh this colourful veggie bake won't weigh you down but it is bursting with flavour and is the perfect accompaniment to your summer barbecue.
Ingredients
- 2 zucchinis sliced
- 4 baby yellow squash sliced
- 5 roma tomatoes sliced
- 1/2 cup parmesan cheese grated
- 1/2 tsp garlic powder
- 1 tsp dried oregano
- 1 salt and pepper *to season
- 2 tbs olive oil
Method

Step 1Preheat the oven to 180˚C.

Step 2In a baking dish, arrange the slices of zucchini, tomato and squash, so that they sit vertically in an alternating pattern.

Step 3Sprinkle with garlic powder, oregano, salt and pepper. Cover with grated cheese.

Step 4Drizzle generously with olive oil and put a lid on the dish or cover the dish in foil.

Step 5Bake it for 20 minutes with the lid on. Then remove the lid and continue baking it for a further 30 - 40 minutes, until the veggies are nice and soft.
Recipe Notes
You can top the veggies with mozzarella if you want something a bit richer.
Use whatever fresh herbs you have handy to sprinkle over the top of your veggie bake.
This easy bake is the ideal summery accompaniment to barbecued meats or your Christmas Day roast.
