Ingredients

  • 1 barbecued cooked chicken deboned
  • 150g snow peas
  • 150g mixed salad leaves
  • 3 nectarines cut into wedges ripe
  • 1/2 red onion small
  • 1/4 cup pine nuts

Dressing

  • 1/2 cup orange juice
  • 1/4 cup extra light virgin olive oil
  • 2 tsp sweet chilli sauce *to taste
  • 1 handful fresh chives chopped *to garnish

Method

  • Step 1
    Add all salad ingredients into a bowl.
  • Step 2
    Sprinkle small amount of the dressing onto the salad and combine well.
  • Step 3
    Garnish with chives.
Recipe Notes

Put the remainder of the dressing on the table for guests to use if they want more on their salad.

Substitute other vegetables as desired.

I have made this without the chicken as a side dish with fish.

You can add peaches instead of nectarine.

Is chicken salad good for you?

There are lots of different recipes for chicken salad and some of them are better for you than others. Salads with mayonnaise, for example, are higher in fat and calories. This salad includes good-for-you fruit, vegetables and nuts. The orange juice and olive oil dressing includes sweet chilli sauce, which contains sugar; adjust or omit, if you prefer. This salad also uses a barbecue chicken, which is a fantastic timesaver. However, barbecue chicken can be higher in sodium than homemade, so prepare your own chicken, if you prefer – just allow to cool and shred before adding to the salad.

How long does chicken salad keep for?

This chicken salad is best enjoyed immediately after it is prepared.
