This cake has a similar texture to strawberry mud cake.
Ingredients
- 600 g cake mix
- 85 g strawberry jelly
- 1 punnet fresh strawberries
- 4 eggs
- 120 ml vegetable oil
Frosting
- 50 g butter
- 250 g cream cheese
- 2 tsp strawberry essence
- 250 g icing sugar mixture
- 250 g pure icing sugar
Method

Step 1Preheat oven to 180C. Grease and flour a medium-large size cake pan.

Step 2In a large bowl, combine cake mix and jelly crystals.

Step 3Purée the strawberries and add to eggs, oil and water.

Step 4Beat at medium speed until smooth. Pour mixture into prepared pan.

Step 5Bake for 45 minutes or until a skewer inserted into the middle of a cake comes out clean.

Step 6Let cool for 10 minutes and remove from pan.

Step 7Frosting: Beat butter and cream cheese at medium speed until smooth. Mix in strawberry extract and icing sugar.

Step 8Spread frosting over the top of the cooled cake and garnish with strawberries or sugared lollies.

Step 9Alternatively cut the cake horizontally into 3 layers and spread a layer of icing between each layer and finish with frosting and decorations on top.
Recipe Notes
This mixture also makes beautiful cupcakes although cooking time is less.
I usually use the Betty Crocker, Super Moist Vanilla Cake mix 600g.
Check with a skewer as to when they are cooked.
You could even make this cake with custard layers instead of using the frosting.
This cake has to be refrigerated even if you don't ice the cake, to ensure it has that lovely 'mud cake' texture.
