This is a hit on the menu. Kids will love this.
Ingredients
- 250 g caster sugar
- 250 g carrot finely grated
- 50 g ground walnuts
- 1 tbs lemon juice
- 1 lemon, rind finely grated
- 1 packet hazelnuts
- 2 packets hazelnut meal
Method

Step 1In a saucepan place carrot, sugar and cook over a medium heat. Stir continuously until mixture comes together as a smooth paste.

Step 2Remove from heat and allow to cool.

Step 3Add ground walnuts, grated lemon rind and lemon juice. Mix together well to form a dough.

Step 4Divide in to 25 and add a hazelnut to each portion. Form balls around hazelnut from each portion.

Step 5Roll each ball in hazelnut meal to cover. Put into paper lined containers to store.

Grate carrots against the smallest holes on the grater.
