This is a lovely cake and very easy to make. Enjoy!
Ingredients
- 125 g butter
- 1/2 cup caster sugar
- 2 eggs
- 1 tsp vanilla essence
- 2 cups self-raising flour sifted
- 1/2 cup milk
- 1 cup fresh strawberries mashed
- 1 tsp strawberry essence optional *to taste
Strawberry icing
- 3 fresh strawberries mashed medium
- 1 1/2 cups pure icing sugar
Method

Step 1Cake: Preheat oven to 180C (160C fan-forced).

Step 2Lightly grease and line a 20cm cake pan.

Step 3Beat the butter and sugar until light and fluffy.

Step 4Add the eggs and vanilla, and beat until smooth.

Step 5Fold in the flour and milk, mixing well.

Step 6Add strawberries to the mix and fold together, add strawberry essence.

Step 7Spoon mixture into the cake pan.

Step 8Bake for 40-45 minutes, or until a skewer inserted comes out clean. Allow to cool.

Step 9Strawberry icing: Add icing sugar to strawberries, mix until combined.

Step 10Spread onto cold cake and serve.
