Take your wings game up a notch with the addition of papaya. Just one serving (150g) of papaya and papaw provides a healthy dose of folate, fibre, vitamin C and vitamin A, which helps keep your immune
system, gut health and skin in-check, so they're the perfect addition to your weekly shopping trolley.
Ingredients
- 2 kg chicken wings
- 2 tsp olive oil
- 1 cup papaya pureed
- 1/4 cup brown sugar firmly packed
- 1/2 cup orange juice
- 2 tsp fresh lime juice
- 1 tsp ginger grated
- 1 tsp chilli powder
- 1 tsp sea salt
- 1 handful coriander leaves *to garnish
- 1 cup papaya chopped *to garnish
- 8 lime wedges *to garnish

Step 1Cut chicken wings into wingettes and drumettes, discard tips (or buy wings which have already been split into sections). Combine all marinade ingredients in a large bowl and mix well. Add wing sections and toss to coat.

Step 2Set wings aside for 30 minutes to marinate. Preheat oven to 200C. Line two rimmed oven trays with baking paper. Remove wings from bowl, reserving marinade, and arrange in a single layer – skin side up – over the prepared trays.

Step 3Bake 25-30 minutes, basting with the remaining marinade twice during cooking. The wings are done when they are sticky and golden, and the meat separates easily when pulled.

Step 4Serve with coriander leaves, fresh papaya, and citrus wedges.
Recipe Notes
You can replace chilli powder for smoked paprika.
