Ingredients

  • 2 oranges, sliced
  • 4 cups water, divided
  • 2 cups sugar
  • Extra sugar, for dusting

Method

  • Step 1
    Place 2 cups of water in a saucepan and bring to the boil. Add orange slices and boil for 3 minutes. Remove slices with a slotted spoon nd place in a bowl of ice water. Discard the water in the saucepan.
  • Step 2
    Add the remaining 2 cups of water to the saucepan. Add the sugar and bring to the boil. Simmer over low heat, stirring occasionally, until the sugar has dissolved.
  • Step 3
    Use the slotted spoon to add the orange slices back to the sugar and water mix. Simmer gently on low for 45 minutes.
  • Step 4
    Remove the orange slices one by one and place on a cooling rack. Leave to dry for 24 hours.
  • Step 5
    Dip the slices in sugar and store them in a tupperware or plastic container in the fridge. Use within a month.
