Nice for dessert with a good dollop of cream or ice-cream.
Ingredients
- 1 1/2 cup dates
- 1 tsp bicarbonate of soda
- 150 g unsalted butter
- 1 1/2 cup self-raising flour
- 1 cup brown sugar firmly packed
- 2 egg lightly beaten
- 2 tbs golden syrup
- 3/4 cup cream
Method

Step 1Preheat oven to 180C. Grease a 6x1 cup muffin pan.

Step 2Place dates and 1 cup of water in a saucepan, bring to the boil, remove from heat, stir in the bicarb.

Step 3Add 60 g of the butter and stir until dissolved.

Step 4Sift the flour into a large bowl, add ⅔ cup of the sugar and stir.

Step 5Add the date mixture and egg and stir until just combined. Spoon mixture evenly into the muffin cups.

Step 6Bake for 20 minutes.

Step 7Syrup: Place golden syrup and cream with the remaining butter and sugar in a saucepan, stir over low heat until sugar dissolves.

Step 8Bring to boil, reduce heat to simmer, stirring occasionally for 2 minutes.
Recipe Notes
To serve, turn cakes on serving dishes, pierce tops with skewer a couple of times the drizzle sauce over top of each cake.
