Ingredients

  • 1 1/2 cup dates
  • 1 tsp bicarbonate of soda
  • 150 g unsalted butter
  • 1 1/2 cup self-raising flour
  • 1 cup brown sugar firmly packed
  • 2 egg lightly beaten
  • 2 tbs golden syrup
  • 3/4 cup cream

Method

  • Step 1
    Preheat oven to 180C. Grease a 6x1 cup muffin pan.
  • Step 2
    Place dates and 1 cup of water in a saucepan, bring to the boil, remove from heat, stir in the bicarb.
  • Step 3
    Add 60 g of the butter and stir until dissolved.
  • Step 4
    Sift the flour into a large bowl, add ⅔ cup of the sugar and stir.
  • Step 5
    Add the date mixture and egg and stir until just combined. Spoon mixture evenly into the muffin cups.
  • Step 6
    Bake for 20 minutes.
  • Step 7
    Syrup: Place golden syrup and cream with the remaining butter and sugar in a saucepan, stir over low heat until sugar dissolves.
  • Step 8
    Bring to boil, reduce heat to simmer, stirring occasionally for 2 minutes.
Recipe Notes
To serve, turn cakes on serving dishes, pierce tops with skewer a couple of times the drizzle sauce over top of each cake.
