A great vegetarian dish for everyone.
Ingredients
- 6 potatoes peeled
- 600g pumpkin
- 3 carrots chopped
- 60g butter
- 100g spinach
- 12 eggs beaten
- 300ml thickened cream
- 1/2 cup cheese grated
Method

Step 1Preheat oven to 180C.

Step 2Lightly grease a lasagne dish.

Step 3Cut potatoes, pumpkin and carrots into cubes.

Step 4Heat butter in frying pan and add the vegetables. Cook covered for 10 minutes, stirring occasionally until golden brown.

Step 5Add spinach and cook until wilted. Continue to cook until all the liquid has evaporated.

Step 6Spoon into lasagne dish.

Step 7Beat eggs and cream until combined.

Step 8Season with salt or pepper and pour egg mixture over the potatoes and top with cheese.

Step 9Bake for 35-40 minutes or until golden brown.
Recipe Notes
Use Maggi Three cheese Potato bake Recipe Mix (with 310ml of milk) in place of eggs.
