Ingredients

  • 3 sheets puff pastry
  • 4 bacon rashers diced
  • 4 eggs
  • 1 onion diced
  • 3 leaves spinach large shredded
  • 1 cup cheese grated
  • 1 tsp salt and pepper

Method

  • Step 1
    Preheat oven to 180C and grease muffin pans.
  • Step 2
    In a medium saucepan, brown onion and bacon.

  • Step 3
    Turn off the heat and add spinach so that the heat wilts it.
  • Step 4
    Add all other ingredients and mix well.
  • Step 5
    Cut small circles from the puff pastry to fit the bottom of the muffin cases.
  • Step 6
    Place pastry in the muffin cases and spoon in 2 teaspoons of mixture.
  • Step 7
    Bake for approximately 20 minutes or until firm and browned.

Recipe Notes

To make ahead and reheat don't cook them as long because they will cook more when reheated. You can add anything to this recipe. I have made them with salmon instead of bacon and it worked nicely.
