If you like cinnamon doughnuts this recipe is a must for you to try at home!
Ingredients
- 2 cups self-raising flour
- 2/3 cup caster sugar
- 1/3 cup vegetable oil
- 1 egg large
- 175 ml buttermilk
- 1 tsp vanilla extract
- 3 tsp raspberry jam
- 100 g unsalted butter
- 1 tsp ground cinnamon *to serve
- 1/2 cup caster sugar *to decorate *extra
Method

Step 1Preheat oven to 180C and grease a 6-hole muffin pan.

Step 2Sift the flour into a medium bowl, then add a pinch of salt and the caster sugar.

Step 3In a jug, combine the vegetable oil, egg, buttermilk and vanilla extract.

Step 4Add to the dry mixture and stir to just combine.

Step 5Place a spoonful of the mixture in each muffin hole and make an indent in the centre.

Step 6Fill each indent with a generous ½ teaspoon of strawberry jam. Cover the jam with the remaining muffin mixture and bake for 20 minutes.

Step 7Remove from the oven and set aside to cool slightly.

Step 8Meanwhile, melt the butter.

Step 9Combine the extra sugar and the cinnamon in a large bowl. When the muffins are cool enough to handle, brush each muffin with the melted butter and roll in the cinnamon sugar.

Step 10Serve while still a little warm.
Recipe Notes
Recipe makes 6 large muffins.
I love using French jam, St Dalfour Four Fruits in particular.
I like to use the large muffin cases for added support.
I often put more jam than the recipe states - at least a tablespoon!
Use vegetable oil.
Tips to convert this recipe to cook in an air fryer
Take a spoonful of wet dough in a hand coated with melted butter, fill with jam and roll up. Gently drop in the airfryer basket and cook for 10 minutes or until golden and cooked through.
