Great party food for all occasions. Really great re-heated or the kids can take them cold to school!
Ingredients
- 3 sheets puff pastry
- 4 bacon rashers diced
- 4 eggs
- 1 onion diced
- 3 leaves spinach large shredded
- 1 cup cheese grated
- 1 tsp salt and pepper
Method

Step 1Preheat oven to 180C and grease muffin pans.

Step 2In a medium saucepan, brown onion and bacon.

Step 3Turn off the heat and add spinach so that the heat wilts it.

Step 4Add all other ingredients and mix well.

Step 5Cut small circles from the puff pastry to fit the bottom of the muffin cases.

Step 6Place pastry in the muffin cases and spoon in 2 teaspoons of mixture.

Step 7Bake for approximately 20 minutes or until firm and browned.

Recipe Notes
To make ahead and reheat don't cook them as long because they will cook more when reheated. You can add anything to this recipe. I have made them with salmon instead of bacon and it worked nicely.
