These are great for that BBQ, so refreshing and light.
Ingredients
- 1 tbs Thai seasoning
- 1 lime juiced zested
- 1 tbs rice bran oil
- 500 g chicken roughly chopped
- 2 capsicums roughly chopped
- 1/2 red onion
Method

Step 1Mix the Thai seasoning, lime zest and juice and rice-bran oil in a shallow bowl.

Step 2Roll chicken in the spice mixture and allow to marinate in the fridge for 20 minutes, or longer if preferred.

Step 3Thread chicken, capsicum and onion onto soaked bamboo sticks.

Step 4Cook slowly on a preheated BBQ.

Step 5Serve with a salad of choice.
