Mildly spicy vegetarian patties.
Ingredients
- 400g canned lentils drained
- 1 cup fresh breadcrumbs
- 1 egg
- 1/2 tsp curry powder
- 1 pinch salt *to taste
- 1 carrot grated small
- 1 tsp dried parsley
- 1 tsp chives chopped
Method

Step 1Process lentils, breadcrumbs, egg, curry powder and salt until smooth.

Step 2Place mixture in a bowl and mix in carrot and herbs.

Step 3Add more breadcrumbs if mixture is too soft to handle.

Step 4Roll mixture into eight patties and refrigerate for 1 hour.

Step 5Shallow fry patties until lightly browned and heated through.
Recipe Notes
They're very nice served in rolls or wraps with some lettuce and sweet chilli sauce.
