A really tasty chicken dish.
Ingredients
- 1 whole chicken
- 1 tbs ground cumin
- 2 tbs sweet paprika
- 1 1/2 tsp cayenne pepper
- 1 tbs ground turmeric
- 1 1/2 tsp ground pepper fresh
- 5 cloves garlic crushed
- 6 tbs lemon juice
- 3 tbs olive oil
Method

Step 1Mix all ingredients together and marinate chicken for approximately 1-2 hours. Roast at 180C for 1 hour.
Equipment
- 1 large roasting pan
Recipe Notes
The juice from the chicken is a delicious gravy and can be used on roasted potatoes, carrot etc. The carcass and leftovers can be turned into a lovely stock. Add carrots, celery, potatoes, diced plus any bortoli or other beans added to make an excellent soup.
