Ingredients
- 750 g chicken mince
- 1/2 cup risoni uncooked
- 1/2 cup parmesan grated
- 1/2 cup fresh basil finely chopped
- 3 green onions thinly sliced
- 1 lemon rind grated
- 2 tbs lemon juice
- 700 g Italian tomato sauce
- 1 1/2 cups chicken stock (liquid)
- 1 pinch salt and pepper *to taste
Method

Step 1Combine mince, risoni, cheese, onions, basil, lemon rind, lemon juice and the salt and pepper.

Step 2Roll 2 teaspoons of mixture into balls. Repeat until all done.

Step 3Cover in glad wrap and refrigerate for 10 minutes.

Step 4Pour the sauce and the stock into a large pan and simmer.

Step 5Place the meatballs into the sauce and bring to the boil.

Step 6Reduce the heat and simmer for 25-30 minutes.

You can make your own tomato cooking sauce for this recipe.
These are served nicely with either a salad or as finger food at a party.
