Ingredients

  • 750 g chicken mince
  • 1/2 cup risoni uncooked
  • 1/2 cup parmesan grated
  • 1/2 cup fresh basil finely chopped
  • 3 green onions thinly sliced
  • 1 lemon rind grated
  • 2 tbs lemon juice
  • 700 g Italian tomato sauce
  • 1 1/2 cups chicken stock (liquid)
  • 1 pinch salt and pepper *to taste

Method

  • Step 1
    Combine mince, risoni, cheese, onions, basil, lemon rind, lemon juice and the salt and pepper.

  • Step 2
    Roll 2 teaspoons of mixture into balls. Repeat until all done.
  • Step 3
    Cover in glad wrap and refrigerate for 10 minutes.
  • Step 4
    Pour the sauce and the stock into a large pan and simmer.
  • Step 5
    Place the meatballs into the sauce and bring to the boil.
  • Step 6
    Reduce the heat and simmer for 25-30 minutes.

You can make your own tomato cooking sauce for this recipe.

These are served nicely with either a salad or as finger food at a party.
