This jam tastes like Christmas in a jar. Combining all my Christmas favourites rum and raisin with apricots and spices. It's great on a cheese platter and amazing on toast or to glaze your Christmas cakes. It's quick easy and uses all the fresh produce available at Christmas time. - WendyAlexander

Ingredients

  • 500 g apricots chopped stone removed
  • 4 tbs raisins
  • 2 tbs rum
  • 1/2 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1/4 cup lemon juice
  • 2 cup sugar

Method

  • Step 1
    Add all ingredients, except sugar, to a large glass microwave safe bowl. Stir well. Microwave on high for 5 mins.
  • Step 2
    Add sugar and stir well. Microwave on high for 20 minutes stirring every 5 minutes.
  • Step 3
    Pour into 4 small sterilised jars, label and enjoy.

  • 1 glass bowl
Recipe Notes
I use Captain Morgan rum.
