This jam tastes like Christmas in a jar. Combining all my Christmas favourites rum and raisin with apricots and spices. It's great on a cheese platter and amazing on toast or to glaze your Christmas cakes. It's quick easy and uses all the fresh produce available at Christmas time.
Ingredients
- 500 g apricots chopped stone removed
- 4 tbs raisins
- 2 tbs rum
- 1/2 tsp ground cinnamon
- 1/2 tsp allspice
- 1/4 cup lemon juice
- 2 cup sugar
Method

Step 1Add all ingredients, except sugar, to a large glass microwave safe bowl. Stir well. Microwave on high for 5 mins.

Step 2Add sugar and stir well. Microwave on high for 20 minutes stirring every 5 minutes.

Step 3Pour into 4 small sterilised jars, label and enjoy.
