I know we swapped the imperial system for the metric system a while ago, but a 453g cake just doesn't have the same ring to it. So if you really have no other cake recipes that you can remember- memorise this one! This means that you have no excuse to go anywhere without a cake. Ingredients

Cake

  • 400 g all-purpose flour
  • 400 g sugar
  • 400 g butter
  • 4 egg
  • 3 tbs icing sugar optional sieved
  • 1 handful fresh blackberry optional

Method

  • Step 1
    Preheat the oven to 170C.
  • Step 2
    Beat the sugar and butter until pale and creamy. Add the eggs in one at a time, betting well after each addition. Sift the flour into the batter and mix until just combined.
  • Step 3
    Pour into a greased deep 20cm cake tin. Bake for 45 minutes or until golden and a skewer comes out clean.
  • Step 4
    Dust with icing sugar, and serve with blackberries and a dollop of thick cream.

Equipment

  • 1 20cm round cake pan
Recipe Notes
If you are not making your cake as deep as mine then lower the cooking time by 10 min. Add a few blackberries and this simple cake gets a delicious, fruity boost.
