A delicious pancake with a difference.
Ingredients
- 4 mango sliced
- 1 cup coconut milk
- 2 egg
- 1 tbs honey
- 2 tsp vanilla essence
- 1 1/2 cup self-raising flour
- 6 passionfruit pulp
- 1 tbs butter
- 1 tbs icing sugar
Method

Step 1Combine, milk, eggs, honey and vanilla in a bowl.

Step 2Add flour and mix to form a smooth batter.

Step 3Heat a frypan with a little butter the pour about ⅓ cup of batter into the pan, gently rolling pan to spread the mixture.

Step 4Reduce heat to low and cook for 3 minutes, or until bubbles appear on the surface of the pancake.

Step 5Flip over and cook for a further 2 minutes until cooked through.

Step 6Serve immediately topped with slices of mango and passionfruit pulp.

Step 7Dust with a little icing sugar.
Recipe Notes
You can also use mixed berries or fruit salad and serve with icecream.
