Delicious flavours of apricots, peaches and Southern Comfort.
Ingredients
- 1 1/2 cups water
- 1/2 cup long-grain white rice
- 2 cups milk
- 1 cup cream
- 2 tbs Southern Comfort liqueur
- 1 tsp vanilla essence
- 1 cup sugar
- 1/2 cup mixed dried fruit
- 3 eggs lightly beaten
Method

Step 1Bring the water and the rice to boil in a saucepan.

Step 2Cover and simmer for about 20 minutes or until the water is absorbed and rice is cooked. Cool.

Step 3Preheat oven to 150C.

Step 4In an ovenproof dish, mix rice with remaining ingredients and bake uncovered for about 1 hour or until firm.

Step 5Pudding will become more firm on standing.

Step 6Can be served warm or cold.
Recipe Notes
Dried fruit can be marinated in Southern Comfort or peach brandy before adding to mixture.
Low-fat milk and evaporated milk can be substituted for milk and cream.
When pudding is cooked, I like to turn the oven off and just leave it in the oven until dessert time.
Tastes even better the next day, chilled.
