Ingredients

  • 1 1/2 cups water
  • 1/2 cup long-grain white rice
  • 2 cups milk
  • 1 cup cream
  • 2 tbs Southern Comfort liqueur
  • 1 tsp vanilla essence
  • 1 cup sugar
  • 1/2 cup mixed dried fruit
  • 3 eggs lightly beaten

Method

  • Step 1
    Bring the water and the rice to boil in a saucepan.
  • Step 2
    Cover and simmer for about 20 minutes or until the water is absorbed and rice is cooked. Cool.
  • Step 3
    Preheat oven to 150C.
  • Step 4
    In an ovenproof dish, mix rice with remaining ingredients and bake uncovered for about 1 hour or until firm.
  • Step 5
    Pudding will become more firm on standing.
  • Step 6
    Can be served warm or cold.
Recipe Notes

Dried fruit can be marinated in Southern Comfort or peach brandy before adding to mixture.

Low-fat milk and evaporated milk can be substituted for milk and cream.

When pudding is cooked, I like to turn the oven off and just leave it in the oven until dessert time.

Tastes even better the next day, chilled.
