I like to make this icing on vanilla, chocolate or banana cakes so the flavour stands out but it is delicious on spicy fruit cakes too.
Ingredients
- 140 g butter softened
- 280 g icing sugar
- 2 tbs milk
- 1/2 tsp spice mix
Method

Step 1Beat the butter in a large bowl until soft. Add half the icing sugar and beat until smooth.

Step 2Add the remaining icing sugar with one tablespoon of the milk.

Step 3Beat until creamy then add chai spice and mix well.

Step 4Add extra icing sugar to thicken or a little extra milk to make more runny if necessary.

Recipe Notes
Chai Spice: 1 teaspoon each of ground cinnamon, ground cardamon and ground ginger. Mix well and store in an airtight container. You can tweak this to personal taste and also add ground black pepper, ground cloves and ground nutmeg for a more authentic spicy chai.
