Ingredients

  • 200g smoky bacon, finely sliced
  • 1 red onion, finely diced
  • 4 cloves garlic, roughly chopped
  • 1 heaped tablespoon smoked paprika
  • Small handful of fresh basil, chopped
  • 2 sprigs thyme
  • 1 tablespoon honey
  • 2 x 400g tin cannellini beans, drained and rinsed
  • 1 x 400g tin butter beans, drained and rinsed
  • 700ml passata

Method

  • Step 1
    Heat a little olive oil in a pan over medium heat and add the onion, garlic and bacon. Saute until the onions are soft and translucent.
  • Step 2
    Add the paprika, basil, thyme and honey and stir to combine.
  • Step 3
    Add the beans and season with salt and pepper.
  • Step 4
    Add the passata and turn the heat down to a low simmer. Cook gently for 30-40 minutes, gently stirring occasionally to prevent the beans sticking to the bottom.
  • Step 5
    Top with some fresh basil or cayenne pepper and serve with crusty bread.
