Lemon and Salt-Crusted Chicken Drumsticks

Ingredients

  • 3 tsp salt flakes
  • 2 tsp garlic salt
  • 1/2 tsp ground paprika
  • 1 lemon rind, finely grated large
  • 2 tbs olive oil
  • 8 chicken drumstick large skin on
  • 0.6 cup self-raising flour
  • 1 tbs olive oil spray

Method

  • Step 1
    Preheat oven to 220C.
  • Step 2
    Lightly grease a large roasting dish.
  • Step 3
    Combine salt flakes, garlic, paprika and lemon rind in a bowl. Add oil and stir to combine.
  • Step 4
    Place drumsticks in a large bowl, spoon over oil mixture. Using fingertips, rub into chicken to coat.
  • Step 5
    Place flour in a snap-lock bag. Add drumsticks, 1 at a time, and toss to coat.
  • Step 6
    Place drumsticks in prepared roasting dish. Spray both sides lightly with oil.
  • Step 7
    Roast drumsticks for 20 minutes, turn, spray again with oil and roast for a further 15-20 minutes or until just cooked through.
