Delicious, simple pasta dish for when you get home late from work. Small servings ideal for an entree at a dinner party. My whole family love this! - country

Ingredients

  • 4 spring onion finely chopped
  • 2 celery stalk finely chopped
  • 1 tsp extra virgin olive oil
  • 1/2 lemon, seeds removed
  • 1 fennel bulb finely chopped
  • 200 g smoked salmon finely chopped
  • 1 tbs capers chopped optional
  • 1/2 cup cream *to taste
  • 400 g pasta

Method

  • Step 1
    Boil water for pasta and cook al dente.
  • Step 2
    Fry spring onions, celery, lemon peel and flesh, and fennel in the olive oil until fragrant and softened.
  • Step 3
    Add salmon and cook for few minutes.
  • Step 4
    Add capers, if using and cream. Keep mixture warm.
  • Step 5
    Drain pasta and place in bowls.
  • Step 6
    Top with the salmon mixture.
  • Step 7
    Grate fresh parmesan over the top along with fresh ground pepper.

You can play around with this recipe. I have also added fresh whole king prawns with the salmon and my kids go mad for that!
