Delicious, simple pasta dish for when you get home late from work. Small servings ideal for an entree at a dinner party. My whole family love this!
Ingredients
- 4 spring onion finely chopped
- 2 celery stalk finely chopped
- 1 tsp extra virgin olive oil
- 1/2 lemon, seeds removed
- 1 fennel bulb finely chopped
- 200 g smoked salmon finely chopped
- 1 tbs capers chopped optional
- 1/2 cup cream *to taste
- 400 g pasta
Method

Step 1Boil water for pasta and cook al dente.

Step 2Fry spring onions, celery, lemon peel and flesh, and fennel in the olive oil until fragrant and softened.

Step 3Add salmon and cook for few minutes.

Step 4Add capers, if using and cream. Keep mixture warm.

Step 5Drain pasta and place in bowls.

Step 6Top with the salmon mixture.

Step 7Grate fresh parmesan over the top along with fresh ground pepper.

You can play around with this recipe. I have also added fresh whole king prawns with the salmon and my kids go mad for that!
