Perfect for morning tea or for morning tea breaks for the kids. They really are a delicious biscuit.
Ingredients
- 125 g soft butter
- 1 cup caster sugar
- 1 egg
- 1 3/4 cups self-raising flour
- 1 pinch salt
- 1 cup coconut
- 1/2 cup caster sugar to coat
Method

Step 1Cream butter and sugar until combined, and add egg.

Step 2Add sifted flour, salt and coconut.

Step 3Roll into balls.

Step 4Dip one side of biscuit ball into extra sugar and place on baking paper on biscuit tray, sugar side up.

Step 5Press gently with a fork. Allow room for spreading.

Step 6Bake at 180C for 10-15 minutes.

Step 7Cool on tray and store in airtight container.
Recipe Notes
Use your own judgement for the flour quantities.
Sometimes I add all the 1¾ cups flour and then add just a dash of milk to bring it all together.
I mix it all in the Kenwood mixer and add the flour on a low setting.
The sugar on the top just adds an extra touch and crunch.
Keep an eye on them in the oven so they don't cook too quickly.
