Ingredients

  • 1/2 cup coarse salt
  • 2 cup brown sugar
  • 4 kg whole fish

Method

  • Step 1
    Mix salt and sugar together.
  • Step 2
    Lay opened fish against mixture, pressing mixture into the fish.
  • Step 3
    Layer fish in a container and leave for at least 6-8 hours, or preferably overnight.
  • Step 4
    In the morning, pat fish dry with paper towels, then place in smoker for 6-8 hours, depending on the thickness of the fish.
Recipe Notes
You can use salmon or trout fillets.
