Great if you love smoked fish and so easy to do.
Ingredients
- 1/2 cup coarse salt
- 2 cup brown sugar
- 4 kg whole fish
Method

Step 1Mix salt and sugar together.

Step 2Lay opened fish against mixture, pressing mixture into the fish.

Step 3Layer fish in a container and leave for at least 6-8 hours, or preferably overnight.

Step 4In the morning, pat fish dry with paper towels, then place in smoker for 6-8 hours, depending on the thickness of the fish.
