Rice dish with smoked cod, tomatoes and onions, served with cheese sauce.
Ingredients
- 1 1/2 cup long-grain white rice
- 4 tomato large ripe skin off
- 500 g smoked cod
- 1 onion large quartered sliced
- 1 tbs oil
Method

Step 1Cook rice and drain. Keep warm.

Step 2Chop onion in quarters and slice. Fry until soft.

Step 3Add tomato and fry until tomato softens.

Step 4Place smoked cod in saucepan and simmer for 5 minutes.

Step 5Drain and flake the cod, removing skin and bones.

Step 6Add the fish to the onion and tomato mixture, then add salt and pepper to taste.

Step 7Add the rice and fold through carefully, trying not to break up the fish too much.

Step 8Serve with cheese sauce on top if desired.
