Ingredients

  • 185 g butter
  • 3/4 cup caster sugar
  • 2 egg
  • 1 1/2 cup plain flour
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • 425 g canned pie apple
  • 1/4 cup sugar

Method

  • Step 1
    Beat butter and sugar until light and fluffy.

    Add eggs one at a time, beating well after each one.
  • Step 3
    Stir in sifted flour, cinnamon and mixed spice.
  • Step 4
    Spread half the cake mixture evenly over the base of a greased and floured 18 cm x 28 cm slice pan.
  • Step 5
    Spread well drained pie apple over cake mixture and sprinkle with extra sugar.
  • Step 6
    Spread the remaining cake mixture over the apple.
  • Step 7
    Bake at 180C for 50 minutes.
  • Step 8
    Allow to cool in pan and cut into squares.

Equipment

  • 1 18cm x 28cm slice pan
Recipe Notes

You may need up to 2 cups of flour if your mixture is too soft for spreading the apple over. It can be tricky spreading the cake mixture on top of the apple. I find it easiest to make several blobs of mixture and then gently join them all up. If you like a thicker layer of apple use a larger tin of pie apple.
