Just as good as the bakery sells!
Ingredients
- 185 g butter
- 3/4 cup caster sugar
- 2 egg
- 1 1/2 cup plain flour
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- 425 g canned pie apple
- 1/4 cup sugar
Method

Step 1Beat butter and sugar until light and fluffy.

Step 2Add eggs one at a time, beating well after each one.

Step 3Stir in sifted flour, cinnamon and mixed spice.

Step 4Spread half the cake mixture evenly over the base of a greased and floured 18 cm x 28 cm slice pan.

Step 5Spread well drained pie apple over cake mixture and sprinkle with extra sugar.

Step 6Spread the remaining cake mixture over the apple.

Step 7Bake at 180C for 50 minutes.

Step 8Allow to cool in pan and cut into squares.

- 1 18cm x 28cm slice pan
Recipe Notes
You may need up to 2 cups of flour if your mixture is too soft for spreading the apple over. It can be tricky spreading the cake mixture on top of the apple. I find it easiest to make several blobs of mixture and then gently join them all up. If you like a thicker layer of apple use a larger tin of pie apple.
