Ingredients

  • 500 g smoked cod
  • 1 cup milk
  • 2 egg sliced
  • 2 tbs butter
  • 2 tbs plain flour
  • 1 pinch seasoning
  • 500 g potato cooked mashed
  • 2 tbs cheddar cheese grated

Method

  • Step 1
    Arrange fish in a greased pan, add ½ cup of the milk, cover and simmer for 10 minutes.
  • Step 2
    Drain fish, but reserve the liquid. Flake fish, spoon into a greased casserole dish and top with egg slices.
  • Step 3
    Melt butter in a pan, stir in flour and cook until bubbly, stir in remaining milk with reserved liquid.
  • Step 4
    Season to taste with salt and pepper, stirring constantly.
  • Step 5
    Bring to the boil and pour over fish and eggs.
  • Step 6
    Cover with mashed potato and top with grated cheese.
  • Step 7
    Bake at 220C for 20 minutes until golden brown.
Recipe Notes

You can also use smoked haddock. Serve with your favourite steamed vegetables.
