This is a great hit with the family, and quick to make.
Ingredients
- 500 g smoked cod
- 1 cup milk
- 2 egg sliced
- 2 tbs butter
- 2 tbs plain flour
- 1 pinch seasoning
- 500 g potato cooked mashed
- 2 tbs cheddar cheese grated
Method

Step 1Arrange fish in a greased pan, add ½ cup of the milk, cover and simmer for 10 minutes.

Step 2Drain fish, but reserve the liquid. Flake fish, spoon into a greased casserole dish and top with egg slices.

Step 3Melt butter in a pan, stir in flour and cook until bubbly, stir in remaining milk with reserved liquid.

Step 4Season to taste with salt and pepper, stirring constantly.

Step 5Bring to the boil and pour over fish and eggs.

Step 6Cover with mashed potato and top with grated cheese.

Step 7Bake at 220C for 20 minutes until golden brown.
Recipe Notes
You can also use smoked haddock. Serve with your favourite steamed vegetables.
