It’s as though the slow cooker was invented to make silverside. While traditionally silverside bubbles away on the stove top, simmering it in your crock pot keeps the temperature stable and there’s no need to be topping up your water levels. All you need to do is pop all the ingredients in the crockpot and then return a few hours later to tender juicy traditional silverside ready to be served with a side of mash.
How to make this easy slow cooker corned beef recipe: key tips
There are 2 schools of thoughts regarding whether you should rinse the corned beef before cooking. Some like the salty kick it gives to the simmering broth whilst others not so much. So, it’s up to you. You don’t need to cover the vegetables and silverside completely with water as the slow cooker creates steam which adds extra liquid. Make sure you cut the carrots into big pieces so they don’t overcook.

Silverside roast can also be bought as corned silverside or corned beef. It has been cured but needs to be simmered until tender. Traditionally brown sugar and malt vinegar are added as the vinegar helps soften the beef and the sugar balances the vinegary flavour. The onion and carrot flavours the broth and can be eaten as a side. You can also add cabbage leaves if you want.
You can serve your slow cooker silverside as is or with a traditional white sauce. Any remaining silverside can be used in sandwiches or try out some of our great ideas for using up leftover silverside.
Ingredients
- 1 silverside roast (beef)
- 2 onions small halved
- 1 carrot medium peeled roughly chopped
- 1/4 cup brown sugar
- 1/4 cup malt brown vinegar
- 2 garlic cloves
- 2 1/2 bay leaves
- 2L Woolworths Beef Liquid Stock 1l
- water
Method

Step 1Place all ingredients in the slow cooker, with silverside on top of the vegetables. Ensure silverside is almost emerged in the stock and water.

Step 2Cook on low for 6½ hours until tender and slightly falling apart.

Step 3Allow to rest for 10 minutes under foil before serving.

Step 4Serve with mashed potato, vegetables from the slow cooker and green beans.

How long will it last in the fridge?
Your silverside will last up to 3 days in the fridge in an airtight container. It is always great the next day for lunch in a roll with some pickles and cheese!
What is silverside?
Did you know that silverside can actually refer to a few different things? In this case, we are talking about the cut of beef that comes from just above the cow’s leg (near the rear). The name silverside comes from the "silver skin," a tough membrane on the side of the cut.
