This recipe is so simple to follow that it’s even in its name: ‘no-fuss’! Don’t be fooled though, simple doesn’t mean bland. The complex flavours melt together as they develop in the slow cooker, creating a dish that is sure to become a new favourite in your household!
Ingredients
- 1 cup arborio/risotto rice
- 1 tbsp butter
- 250 g bacon rashers, rind removed and chopped
- 400g chicken thigh fillets, diced
- 2 garlic cloves, minced
- 1/2 cup shallots chopped
- 400 g cream-style canned corn
- 1/2 cup parmesan cheese

Step 1Using a searing slow cooker (or pan on stovetop) melt butter and add bacon, chicken, garlic and cook over high heat for approx. 5-10mins or until chicken is just cooked. If using a pan add these ingredients to slow cooker now. If using searing slow cooker on stove or in unit, turn it back to slow cook setting now.

Step 2Add rice, shallots, capsicum, corn and stock

Step 3Cook on HIGH for 2hrs

Step 4tir through parmesan and serve with extra parmesan to garnish.
