Slow cooker no-fuss risotto

This recipe is so simple to follow that it’s even in its name: ‘no-fuss’! Don’t be fooled though, simple doesn’t mean bland. The complex flavours melt together as they develop in the slow cooker, creating a dish that is sure to become a new favourite in your household!

Ingredients

  • 1 cup arborio/risotto rice
  • 1 tbsp butter
  • 250 g bacon rashers, rind removed and chopped
  • 400g chicken thigh fillets, diced
  • 2 garlic cloves, minced
  • 1/2 cup shallots chopped
  • 400 g cream-style canned corn
  • 1/2 cup parmesan cheese

Method

  • Step 1
    Using a searing slow cooker (or pan on stovetop) melt butter and add bacon, chicken, garlic and cook over high heat for approx. 5-10mins or until chicken is just cooked. If using a pan add these ingredients to slow cooker now. If using searing slow cooker on stove or in unit, turn it back to slow cook setting now.
  • Step 2
    Add rice, shallots, capsicum, corn and stock
  • Step 3
    Cook on HIGH for 2hrs
  • Step 4
    tir through parmesan and serve with extra parmesan to garnish.
