Cheesy garlic bread stuffed chicken

Ingredients

  • 125g garlic bread
  • 100g cream cheese
  • 2 cups grated pizza cheese
  • 2 tsp herbs, finely chopped
  • 4 chicken breasts

For garlic butter

  • 40g salted butter, softened
  • 1 tsp garlic, finely chopped

Method

  • Step 1
    Preheat oven to 180C. In a food processor, blitz garlic bread into a rough crumb. Add cream cheese, 1 cup grated pizza cheese and herbs, and pulse to combine.
  • Step 2
    To make garlic butter, mix butter and garlic together.
  • Step 3
    Cut each chicken breast horizontally part the way through to create a flap. Open out and place a quarter of the garlic bread mixture along each cut chicken breast, the close the flap back over to encase the filling. Season chicken well with salt and pepper and place in an oven-proof dish. Dot the tops of each piece with garlic butter. Sprinkle over remaining cup of grated cheese.
  • Step 4
    Bake for 25 minutes until chicken is cooked through and cheese is golden and melted. Allow to rest for 5 minutes then serve whole or sliced to show the stuffing.
Recipe Notes

I used regular supermarket garlic bread - about half a stick. You can also use store-bought garlic butter if you don’t want to make your own.

I used parsley, thyme and chives. You can use dried herbs if that’s all you have.

Serve with salad or vegetables.
