Something different to do with chicken in the slow cooker. A really tasty and light meal.
Ingredients
- 1 tbs oil
- 500g chicken breast fillet diced
- 1 onion diced
- 1 carrot diced
- 1 red capsicum diced
- 1/4 cup honey
- 90ml light soy sauce
- 1 1/2 tbs tomato sauce
- 2 tsp ginger crushed
- 1 tsp garlic crushed
- 440g (crushed) canned pineapple
- 1 tbs cornflour
- 1 tbs water
Method

Step 1Heat the oil and cook the onion and chicken.

Step 2Add all ingredients, except the pineapple, cornflour and water, into the slow cooker.

Step 3Strain the pineapple and add the juice to the slow cooker. Store pineapple in the fridge until needed.

Step 4Cook on high for approximately 4 hours.

Step 5Mix the cornflour and water. Add to the slow cooker with the pineapple and mix.

Step 6Cook, uncovered, on high for a further 30 minutes.
