Quick and easy summer dish that takes under 20 minutes to cook!
Ingredients
- 275 g pappardelle pasta
- 1/2 onion diced large
- 1 garlic clove finely chopped
- 1 red chilli thinly sliced
- 1/3 cup extra virgin olive oil
- 1/2 lemon juiced
- 1/3 cup white wine
- 1/4 cup fresh curly parsley finely chopped
- 1 bunch broccolini
- 1/2 punnet cherry tomato halved
- 2 cups baby spinach
- 200 g garlic prawns
- 1 tbs parmesan cheese grated
Method

Step 1Bring water to the boil ready for pasta.

Step 2Slice broccolini into 2cm pieces and steam for approximately 5 minutes until half cooked.

Step 3Saute onions, garlic and chilli for 1-2 minutes until starting to turn translucent. Add garlic prawns and cook until starting to turn orange.

Step 4Add cherry tomatoes and cook for 2-3 minutes until beginning to soften. Add remaining oil, white wine and broccolini. Add pasta to water now.

Step 5Stir until combined, add fresh parsley, baby spinach and lemon juice. Season with salt and cracked pepper.

Step 6Stir together and add cooked, drained pasta.

Step 7Serve with freshly grated parmesan.
Recipe Notes
I use Latina Basil and Cracked Pepper Pappardelle.
You don't have to add the chilli if you don't like it.
Make sure not to over cook the prawns, they cook quickly.
